The North of Italy is home to the world-famous white truffle, Parmesan cheese, Parma ham, Balsamic vinegar, Barolo and Chianti wines, and of course, it produces some of the finest olive oils in the world. Our menu embraces all Northern Italy has to offer. Some menu items have been simplified or adapted to today’s taste and way of life, then carefully tested and ‘tasted’.
The key to good Italian food is freshness. There are no second bests and no Italian chef would even contemplate preparing a dish without the best quality, freshest ingredients. The seasonal menu takes advantage of fresh local produce, authentic Italian ingredients and house made pastas. Il Cacciatore is fully licensed, with full bar service, and a wine list showcasing some of the Hunter’s best wines.
Il Cacciatore also has a second dining area and a spacious adjoining deck, which overlooks the landscaped reed-lined lake. Perfect for al fresco dining, it is also available for private dinners or cocktail parties.
Adjacent to the restaurant is the cosy guest lounge featuring plush sofas and an open fire during winter where diners can enjoy a pre-dinner drink or after dinner coffee and port.
Il Cacciatore is open for dinner nightly from 6 p.m. Il Cacciatore is not open for lunch however is available for private functions during the day. Reservations are strongly recommended. Guests are advised that the restaurant is not BYO.

Takeout Pizza & Pasta Menu
Il Cacciatore is pleased to offer a selection of pizza and pasta dishes available for ‘take out’ from 5pm daily. Pizzas are thin crust topped with our ‘home made’ sugo (fresh tomato sauce) - the gnocchi is also home made. For guests checking-in later ‘take out’ in your room or on your deck is a popular option. A fresh pizza, a glass of Hunter wine and Friday night football! Does it get any better?
Gnocchi Making Classes at Il CacciatoreIl Cacciatore is pleased to offer budding chefs and food enthusiasts the opportunity to learn the technique of gnocchi making in two different formats.
During Wine and Food Month (May and June 2016) Il Cacciatore will be running both formats, see dates below. For other times you'll need to organise your small group (minimum 10 – maximum 16) of like-minded individuals who enjoy Italian food, wine, a fun time and don’t mind getting down and dirty (floury)!
Hands On Class 21/2 - 3hrs
........is the full blown gnocchi making class, where participants have the opportunity to observe demonstrations, as well as enjoy full participation in the gnocchi making process from beginning to end. Once the gnocchi has been made paricipants get to observe demonstrations of preparing gnocchi dishes in different ways. These dishes become part of your two course lunch which also includes a glass of wine.
The cost of $115 per person will include:
- Gnocchi making class with some gnocchi to take home
- Cooking demonstrations
- 2 course lunch with wine
- Classes can be organised for weekend lunches and any night (excluding Friday & Saturday)

Watch, Assist and Indulge - 11/2 hours
....is an abbreviated version of the hands on class. This format allows participants the opportunity to observe gnocchi making from start to finish, assist the demonstrator and enjoy the taste of three different gnocchi.
The cost of $60 per person will include
- Gnocchi making demonstration with part hands on participation
- Demonstrations in cooking gnocchi dishes
- Enjoy the three gnocchi dishes demonstrated
